Server security - How to disble scanning of a particular folder

We have Protection service for business security on our servers.

What is the proper way to disable scanning of some folders and drives?

I think that if something can be noticed else (or adviced) - some of more experienced F-Secure business users or even official F-Secure Staff will do it!
